Cucumbers and Tomatoes in Yogurt Raita

  • cilantro or parsley (snipped)

  • green onions with tops (chopped)

    Cut cucumber (halved) lengthwise. Scoop out seeds, chop cucumbers.

    Mix cucumbers, green onions with tops (chopped) , and salt and let stand ⏱️ 10 minutes .

    Add tomatoes (chopped) and mix in garlic (finely chopped) , cilantro or parsley (snipped) , cumin (ground) , and pepper . Toss the cucumber mixture, cover and refrigerate at least ⏱️ 1 hour . Refrigerate overnight.
